This is a very customizable tour, you will communicate with your guide prior to your arrival to determine your desires for the day. You will be given all the information about the tour planned for you!
If you are not travelling with a bike, the guide will suggest you a local rental bike shop (so you can arrange for bike rental), and then arrange a time and location to meet on the day of the tour. At this point you will be all set and ready for your Tuscan cycling adventure.
During the ride, there will be the possibility to stop for pictures, espresso, snacks, gelato, wine and other treats. In addition, you will be able to express your willing to go further or start to return to town. The guide will stay with you for the day, so the departure and return times are at your discretion, with the aim to give you one of the best days of your life on a bike.

We booked this tour to see Tuscany by bike in one day and get some exercise, as we love to bike casually. The exercise was fabulous, as we covered 35 miles! There were some lovely views. However, there was also a lot of traffic with few dedicated bike paths, thus taking away from the ability to relax and enjoy the viewing the area. If I were to repeat I would probably opt for a more rural venue with more dedicated paths.
